Confetti Artichokes - cooking recipe

Ingredients
    1/2 c. lemon juice
    2 medium artichokes
    1 medium chopped finely onion
    1 clove garlic, minced
    salt and pepper
    4 tsp. olive oil
    2/3 c. white wine and 2 c. water
    1/4 c. parsley, chopped
Preparation
    Place lemon juice in a large bowl and fill 3/4 with water. Clean artichokes.
    Trim stems and bottom.
    Cut about 1 1/2-inches off top.
    Place in lemon water.
    Reserve.
    Partially cover each pot and cook over medium low heat for 1 hour (artichokes should be tender and pull apart easily).
    Carefully place artichokes on a shallow platter.
    Spoon liquids on top.
    Sprinkle with parsley. Enjoy warm or cool.
