Pumpkin Cake - cooking recipe
Ingredients

1/2 c. shortening
1 1/4 c. sugar
2 eggs
1 1/4 c. flour (sifted cake flour)
1 Tbsp. baking powder
1/2 tsp. salt
1/2 tsp. cinnamon
1/2 ground nutmeg
1 c. cooked and cooled fresh pumpkin or 1 c. canned
3/4 c. milk
1/2 tsp. baking soda
1/2 c. chopped nuts
Preparation

In large bowl, cream shortening; add sugar, beating until light and fluffy.
Beat in eggs.
In medium bowl, sift flour, baking powder, salt, cinnamon, ginger and nutmeg.
Combine the pumpkin and milk.
Stir in baking soda.
Add flour and pumpkin mixtures alternately to shortening sugar mixture, beating well after each addition.
Fold in nuts.
Turn batter in prepared baking pan.
Bake at 350\u00b0 for 50 minutes.
Frost with Raisin-Brown Sugar Icing.
