Sweet Potato Souffle - cooking recipe
Ingredients

4 lb. sweet potatoes, cut up
1/2 c. milk
1/4 c. butter or margarine
1/2 c. firmly packed brown sugar
1/4 c. granulated sugar
1 tsp. ground cinnamon
1 c. miniature marshmallows
Preparation

Preheat broiler.
Place potatoes in a large saucepan.
Add milk and water to cover.
Bring to boil.
Reduce heat.
Cover and simmer 15 to 20 minutes until soft.
Drain potatoes, reserving cooking liquid.
Place potatoes in food processor or blender.
Add butter, brown sugar, granulated sugar and cinnamon.
Process until well blended.
Thin with reserved cooking liquid, if necessary. Pour mixture into 9-inch square glass baking dish.
Sprinkle marshmallows over potatoes mixture.
Broil 8 inches from heat source for 1 minute until marshmallows are lightly browned.
