Ingredients

2 Tbsp. butter
2 (8 oz., 1 1/4-inch thick) tenderloin steaks
1/4 c. brandy
1 tsp. Worcestershire sauce
2 Tbsp. Dijon mustard
1/2 c. heavy cream
pepper
Preparation

Melt butter in heavy large skillet over medium-high heat.
Add steaks and cook 6 minutes per side for medium.
Add mustard and Worcestershire to skillet with steaks and stir to mix.
Season with pepper.
Add brandy and remove from heat.
Ignite the sauce with a long match.
When flames subside, return skillet to heat and remove the steaks, keeping them warm.
Add cream to skillet and boil for 1 to 2 minutes or until slightly thickened.
Pour sauce over steaks and serve.
Yields 2 servings.
