Reuben Casserole - cooking recipe

Ingredients
    2 c. cooked rice
    1 (8 oz.) can sauerkraut, drained
    1 (12 oz.) can corned beef, diced
    1 c. Swiss cheese, grated
    1/2 c. mayonnaise
    3 Tbsp. sweet pickle relish
    1 tsp. prepared mustard
    1 tsp. salt
    1 tsp. pepper
    1 medium tomato, peeled and sliced
    1/2 c. rye bread crumbs
Preparation
    Combine rice, sauerkraut, corned beef and 1/2 cup cheese. Blend mayonnaise, pickle relish, mustard, salt and pepper.
    Stir into rice mixture.
    Turn into a 2-quart casserole.
    Arrange tomato slices on top.
    Sprinkle with remaining cheese.
    Top with bread crumbs; bake at 350\u00b0 for 30 minutes, or until hot and bubbly. Yields 6 servings.
