Quiche Lorraine - cooking recipe

Ingredients
    1 (9-inch) pie crust
    1 c. shredded Swiss cheese
    6 eggs
    1 1/4 c. half and half or milk
    1/8 tsp. ground nutmeg
    8 slices bacon, crisp, cooked, drained and crumbled
    1/2 tsp. salt
    1/8 tsp. pepper
Preparation
    Line unbaked shell with 12-inch square of aluminum foil.
    Fill with rice or dried beans or peas.
    Cover rim of shell with edges of foil.
    Bake in preheated oven at 450\u00b0
    until lightly browned at edges, 10 to 15 minutes.
    Lift out foil and rice.
    Cool on wire rack.
