Eggplant Casserole - cooking recipe
Ingredients

eggplant
salted water
1 c. chopped celery
1 small onion, chopped
1/4 lb. cheese, chopped
1/2 bell pepper, chopped
1 egg
1 c. milk
3 slices dry bread, chopped
Preparation

Peel eggplant and boil in salted water until tender; drain. Mix mashed eggplant with celery, onion, bell pepper and egg.
Put in buttered dish in layers with dry bread and cheese.
Use salt and pepper to taste.
Bake about 40 minutes or until golden brown.
