Ingredients

2 c. flour
1 Tbsp. baking powder
1/2 tsp. salt
1/8 tsp. cream of tartar
3 eggs, separated
1 1/2 c. cooked, mashed sweet potatoes
1 c. plus 2 Tbsp. milk
1/4 c. packed brown sugar
4 Tbsp. margarine, melted
Preparation

In a large bowl, combine flour, baking powder, salt and cream of
tartar;
set aside.
In another bowl, mix egg yolks with sweet
potatoes,
then
stir
in
milk,
brown sugar and margarine.
Add
to
flour
mixture, stirring until moistened. Beat
egg whites (at room temperature) until stiff peaks form; carefully
fold
into
batter
(this
batter
is
real thick). Spread
2/3
cup
batter
on a preheated oiled waffle iron and cook until lightly browned, about 5 minutes on medium setting. Makes 8 (8-inch) waffles.
