Carrot Souffle Surprise - cooking recipe
Ingredients

2 c. cooked carrots, mashed
4 Tbsp. butter or margarine
2 Tbsp. flour
1 tsp. baking powder
1/2 tsp. salt
1 scant tsp. cinnamon
1/2 c. sugar
1 c. milk
3 eggs, beaten
dash of lemon juice (optional)
Preparation

Add butter to mashed carrots.
Combine flour, baking powder, salt and cinnamon and add to carrots.
Mix well the sugar, milk and eggs and add to carrots (add lemon juice).
Pour into buttered 8 x 8 x 2 1/4-inch baking dish or any 2-quart capacity.
Bake 30 minutes at 325\u00b0.
Remove from oven and cover with topping.
