Granny'S Southern Bean Soup - cooking recipe

Ingredients
    1 lb. Great Northern beans
    ham hock, smoked and meaty
    1/2 c. chopped onion
    1 c. chopped celery
    2 carrots (raw), diced
    3 medium raw potatoes
    salt to taste
Preparation
    Wash beans; add enough water to make 5 quarts.
    Add ham hock, onion, celery and carrots; cook until beans are tender, (watch; may need to add more water as this cooks), 1/2 hour.
    Before completed, add diced potatoes, salt and pepper to taste.
    Whole process should not be longer than 2 1/2 hours (varies).
