Ingredients

2 1/4 lb. boneless chuck roast
salt and pepper
4 peeled and halved carrots
4 peeled and halved potatoes
4 peeled onions
1 pkg. Sloppy Joe mix
1 (6 oz.) can tomato juice
Preparation

Salt and pepper beef; place in Dutch oven sprayed with vegetable spray.
Surround with vegetables.
Combine Sloppy Joe mix with tomato juice; pour over roast.
Cover with a tight fitting lid.
Roast in preheated oven at 400\u00b0 for 1 hour and 10 minutes.
Remove from oven; allow to stand for 30 minutes.
Serves 4.
