Pina Colada Cheese Cake - cooking recipe

Ingredients

1 1/2 c. vanilla wafer or graham cracker crumbs
1/2 c. flaked coconut (optional)
3 Tbsp. butter or margarine, melted
8 oz. Dole crushed pineapple
3 pkg. (8 oz. each) cream cheese, softened
3 eggs
1 c. sugar
1 c. dairy sour cream
3 Tbsp. dark rum
2 tsp. coconut extract
Dole pineapple topping *

Preparation

*You will need 2 (19 ounce) cans of Dole crushed pineapple in juice or syrup.
