Elizabeth'S Pork Chop Casserole - cooking recipe
Ingredients

6 pork chops
1 c. rice, uncooked
1 medium onion, chopped
2 cans (14 1/2 oz.) stewed tomatoes
salt and pepper to taste
2 Tbsp. olive oil
1 lb. lean ground beef
1 small onion, diced
2 Tbsp. flour
2 cubes beef bouillon
2 Tbsp. soy sauce
1 1/2 c. mixed vegetables or leftover vegetables
1 c. mushrooms (optional)
2 c. water
Preparation

In a large frying pan, scramble and brown meat and onions. Add flour, bouillon, soy sauce. Mix well. Add vegetables and mushrooms. Add water and let simmer until thickened to desired thickness. Serve over mashed potatoes or rice.
