Strawberry Delight - cooking recipe

Ingredients
    1 qt. strawberries
    2 c. cooked rice
    1/4 c. sugar
    1 Tbsp. vanilla
    1 pt. heavy cream
    1 c. cut-up marshmallows
Preparation
    Set aside 8 large strawberries with greens for garnish.
    Stem and slice remaining berries; drain off juice.
    Add rice, sugar and vanilla to sliced berries.
    Whip cream until very stiff; set aside 1/3 of cream for garnish.
    Mix remaining cream and marshmallows to strawberries; mix well.
    Spoon into dessert dishes to 3/4 full. Top with 1 tablespoon reserved cream and whole strawberry. Refrigerate 1 hour.
    Yield: 8 servings.
