Rigatoni Ala Vodka With Shrimp - cooking recipe

Ingredients
    4 Tbsp. butter
    1 medium size onion, diced
    1 clove garlic, chopped
    3 basil leaves, chopped
    1/2 c. vodka
    1 (14 oz.) can whole stewed tomatoes
    1/2 pt. heavy cream
    1 lb. peeled and deveined shrimp
    1 lb. rigatoni, cooked and drained
    additional basil leaves for garnish (optional)
Preparation
    Melt butter over medium heat, do not let it brown.
    Over medium to low heat, cook onion, garlic and basil until onion pieces are soft, about 8 to 10 minutes.
    Add vodka.
    Raise heat to boil, sirring the mixture frequently.
    Lower heat to simmer and cook sauce for 8 minutes or until about 1/4 of the mixture has evaporated and the aroma of the vodka has subsided.
    Add tomatoes, continue cooking about 5 minutes longer.
    (Tomatoes should be soft.)
    Add heavy cream and cook 5 minutes longer.
    Add shrimp, cover pan and cook additional 5 to 8 minutes or until the shrimp are cooked through.
    Cook rigatoni according to package directions. Drain and transfer rigatoni in a large bowl.
    Add vodka sauce and toss well with pasta.
    Garnish with basil leaves, if desired. Makes 4 servings.
