Ingredients

2 1/2 c. mashed potatoes
1 egg
2 Tbsp. flour
1 Tbsp. onion, finely chopped
dash of pepper
Preparation

Combine all ingredients in a bowl; mix well.
Lightly oil a skillet and heat.
Drop batter by spoonfuls onto the hot skillet. Fry until brown on one side.
Flip and brown on the other side.
