Shark Grilled With Chinese Seasonings - cooking recipe

Ingredients
    2 1/2 lb. mako shark steaks (or swordfish or tuna)
    1-inch piece fresh ginger, peeled and minced
    2 cloves garlic, minced
    2 Tbsp. light soy sauce
    2 Tbsp. rice vinegar
    1 Tbsp. Chinese sesame oil
    several drops hot oil
    vegetable oil for oiling grill
    1 tsp. sugar
    1/2 c. finely minced scallions
Preparation
    Cut shark steaks in 4 to 6 equal portions.
    Combine ginger, garlic, soy sauce, rice vinegar, sesame oil and hot oil in a glass or ceramic dish large enough to hold fish in a single layer.
    Add fish.
    Turn pieces once, cover and allow to marinate in refrigerator for an hour, turning them once or twice more.
