Eggplant Roll-Ups - cooking recipe

Ingredients
    1 large eggplant, sliced lengthwise
    2 eggs, beaten
    bread crumbs
    garlic, finely chopped
    Ricotta cheese
    Mozzarella, grated
    parsley, chopped
    marinara sauce
Preparation
    Dip eggplant slices in eggs, then in bread crumbs, seasoned with garlic.
    Brown lightly.
    Lay on platter.
    Mix Ricotta, Mozzarella and parsley.
