Salmon With Fresh Basil Sauce - cooking recipe

Ingredients
    1 lb. salmon fillets, skinned
    1 Tbsp. oil
    1/4 tsp. salt
    freshly ground pepper
    1 1/2 Tbsp. lemon juice
    2 shallots, thinly sliced
    1 garlic clove, finely chopped
    2 c. loosely packed basil leaves
    1/4 c. dry white wine
    1/4 c. heavy cream
Preparation
    Rinse fillets under cold water; pat dry.
    Cut fish into slices 1-inch thick.
    Fry fillets in the oil in a skillet over high heat for 3 minutes.
    Turn pieces over and sprinkle with the salt and pepper and lemon juice.
    Cook on second side another 3 minutes. Remove pan from heat.
