Popovers From Jordon Pond House, Bar Harbor, Maine - cooking recipe

Ingredients
    2 large eggs
    1 c. milk
    1 c. sifted all-purpose flour
    1/4 tsp. salt
    1/8 tsp. baking soda
Preparation
    Preheat oven to 425\u00b0.
    Beat eggs at high speed until lemon colored.
    On slow speed, add 1/2 cup milk; beat until well mixed. Sift flour, salt and soda.
    Add slowly on slow speed to eggs. Scrape sides of bowl and beaters.
    Turn to high speed; add rest of milk.
    Beat for 5 to 7 minutes, until batter is smooth and about as thick as heavy cream.
    Pour into well-greased muffin tins or custard cups.
    Bake at 425\u00b0 for 15 minutes.
    Without opening oven, reduce heat to 350\u00b0 and bake 15 to 20 minutes longer.
    Serve at once.
