Potato And Onion Soup - cooking recipe
Ingredients

4 c. peeled and sliced potatoes
3 c. thinly sliced yellow onions
2 qt. water
3/4 c. heavy cream
1 Tbsp. butter
2 Tbsp. minced parsley
1 Tbsp. minced chives
1 Tbsp. salt
Preparation

In saucepan simmer vegetables, water and salt together for 50 minutes.
Use potato masher to mash vegetables (or use blender). Season to taste.
Just before serving, reheat to simmer and remove from heat.
Stir in cream by spoonfuls and beat in butter.
Serve with minced parsley and chives on top.
Serves 6 to 8.
