Natchitoches Meat Pies - cooking recipe
Ingredients

2 Tbsp. flour
1/2 lb. ground beef
2 large onions, chopped
3 Tbsp. chopped parsley
dash of red pepper
1 Tbsp. shortening
1 1/2 lb. ground pork
6 green onions, chopped
salt and pepper to taste
Preparation

Make a roux of shortening and flour; add other ingredients and cook thoroughly.
Cool completely before placing in pastry.
Roll pastry very thin and cut with a saucer.
Fill circle half full of meat mixture.
Fold dough over and dampen edges with water.
Crimp with a fork to seal.
Fry in deep fat or bake if you prefer.
