Cheese Souffle - cooking recipe

Ingredients
    4 Tbsp. butter
    3 Tbsp. flour
    1 1/2 c. half and half cream
    1 tsp. salt
    1/4 tsp. cayenne
    1/4 tsp. dry mustard
    1/4 tsp. ground nutmeg
    2 c. grated sharp Cheddar cheese
    6 egg yolks
    8 egg whites
    1/4 tsp. cream of tartar
Preparation
    Over
    low heat melt butter and add flour, stirring with wooden spoon
    until
    blended.
    Slowly
    add
    cream,
    stirring constantly.
    Heat
    until
    thick, do not let mixture boil.
    Add salt,
    cayenne,
    mustard, nutmeg, 1 1/2 cups cheese and blend. Beat
    egg
    yolks two at a time; add to mixture, blending after each
    addition.
    Place
    in large bowl.
    Add cream of tartar to egg whites before beating, beat until stiff.
