Watermelon Rind Pickles - cooking recipe
Ingredients

1 watermelon
1 Tbsp. lime
Preparation

Carefully remove and reserve rind from melon.
Cut rind into desired shapes or pieces.
Soak overnight in 1 gallon of cold water and lime.
Stir occasionally while soaking.
After soaking, rinse well.
Place rinsed rinds in saucepan and cook in enough water to cover rinds, for 20 minutes.
Drain and soak rinds in an ice bath, changing water and adding ice until cooled.
Remove rinds from ice bath and put in boiling water for 10 minutes. Drain and cool with running water.
Now you are ready to make your syrup.
