Mexicali Rice - cooking recipe

Ingredients
    1 green pepper, diced
    1 red pepper, diced
    1 onion, diced
    1 Tbsp. oil
    1 c. salsa
    1 c. chicken broth
    1 1/2 c. instant rice
    1 (10 oz.) pkg. corn
    1/2 c. shredded Cheddar cheese
Preparation
    Cook peppers and onions until tender.
    Add corn, salsa and broth.
    Bring to boil.
    Stir in rice, cover and remove from heat. Let stand 5 minutes.
    Add cheese, fluff with fork.
    Serve with beef filled tostadas.
