Wild Rice Almond Salad - cooking recipe
Ingredients

1 pkg. quick cooking Uncle Ben's long grain and wild rice
1 c. chopped celery
1 c. shredded carrots
1 pkg. slivered almonds
1/2 c. olive oil
1/4 c. red wine vinegar
1/2 tsp. sugar
1 tsp. salt
leaf lettuce
Preparation

Cook rice according to package directions.
Transfer to large bowl.
Stir in celery and carrots while rice is still hot.
Saute almonds in olive oil until lightly browned.
Stir in vinegar, sugar and salt.
Pour over rice and vegetable mixture.
Toss until well blended.
Cover and chill.
To serve, line a bowl with leaf lettuce.
Spoon in rice mixture.
