Eggplant Parmesan - cooking recipe
Ingredients

2 medium size eggplant
3 or 4 pkg. various cheese
spaghetti sauce (your own or jar)
egg
flour
milk
olive oil
Preparation

Peel and slice eggplant.
Use 3 bowls for the egg, flour and milk.
Put each slice in flour, then egg mixture, then flour.
Do this until all eggplant is coated.
Use a large frying pan or wok. Fill halfway with olive oil.
Fry each piece until golden brown. Put on a plate with a paper towel.
Take a large casserole and put sauce on bottom.
Layer eggplant, next sauce, then cheese.
Do this until pan is full.
Put last layer of cheese on top.
Bake at 350\u00b0 for 35 to 40 minutes until bubbly.
Serve and enjoy.
Great leftover.
Heat in microwave.
