Greek Rice Pudding 2(Rizogalo) - cooking recipe

Ingredients
    2 qt. milk
    1/2 c. Red River rice (not converted)
    1/2 c. sugar
    strip of lemon peel
    4 egg yolks
Preparation
    Combine milk, rice and sugar in large pan.
    Bring to a boil and continue boiling for 45 minutes.
    Add lemon peel last 10 minutes of boiling time.
    Remove from heat.
    Beat 4 egg yolks. Add slightly cooled liquid from rice mixture into egg yolks, beating continuously.
    When bowl is full, pour egg-milk liquid back into rice, stirring constantly.
    If pudding appears too thin, bring to 2 quick boils.
