Jeanette'S Squash Bisque - cooking recipe

Ingredients
    1/2 c. butter
    4 c. squash, chopped
    2 large carrots
    1 Tbsp. salt
    1 pt. half and half milk
    1 large onion, chopped
    2 medium potatoes, cubed
    3 cans chicken broth
    1/2 tsp. red pepper
    croutons, optional
Preparation
    Melt butter and saute onions.
    Add vegetables, broth, and seasonings.
    Cook until vegetables are tender.
    Pour into blender - fill blender half full at a time.
    Blend until smooth.
    Pour back into pot.
    Add half and half.
    Head - Do NOT boil.
    Add croutons if desired.
