Festive Corn Bread - cooking recipe
Ingredients

8 Tbsp. chilled unsalted butter, cut into 1/2 inch pieces
1 c. chopped onion
1 3/4 c. yellow cornmeal
1 1/4 c. all purpose flour
1/4 c. sugar
1 Tbsp. baking powder
1 1/2 tsp. salt
1/2 tsp. baking soda
1 1/2 c. buttermilk
3 large eggs
1 1/2 c. Pepper Jack cheese
1/2 c. drained roasted red peppers
1/2 c. chopped fresh basil
Preparation

Preheat oven to 400\u00b0.
Butter 9 x 9 x 2 inch pan. Melt 1 Tbsp. butter in medium nonstick skillet over medium low heat.
Add onion and saute until tender, about 10 minutes.
Cool. Mix cornmeal and next 5 ingredients in large bowl.
Add 7
Tbsp. butter and rub in with fingertips until mixture resembles coarse meal.
Whisk buttermilk and eggs in medium bowl to blend.
Add buttermilk to dry ingredients and stir until blended.
Mix in cheese, red peppers, basil and onion.
Transfer to prepared pan.
