Diabetic Fruit Cake - cooking recipe

Ingredients
    1 c. shortening or margarine
    2 c. hot water
    1 tsp. cinnamon
    20 pkg. Equal
    1/2 box raisins
    1 box dates, cut up
    1/4 tsp. nutmeg
    1/2 tsp. cloves
    2 c. shredded carrots
    1 (20 oz.) can crushed pineapple
    1 c. nuts (if desired, to be added to mixture last)
    5 c. self-rising flour
    1 tsp. soda
    1 tsp. salt
Preparation
    Bring shortening or margarine, cinnamon, Equal, raisins, dates, nutmeg, cloves, carrots and pineapple to a boil for a few minutes in the hot water.
    Cool and add flour, soda, salt and nuts, if desired.
    Mixture will be very stiff, so mix with hands. Bake in greased tube pan for 1 hour at 300\u00b0.
    Store in a cool place.
    Will keep for a long time in the refrigerator.
