Ingredients

1 (No. 2) can sliced beets or beets from your garden (about 1 lb.), cooked and sliced (save 1/2 c. cooking juice)
1 Tbsp. cornstarch
1/4 c. brown or white sugar
3 Tbsp. fresh lemon juice
1/2 tsp. salt
1 Tbsp. oleo
1 Tbsp. horseradish (use less if you don't like spicy foods)
Preparation

Drain beets and save juice.
Combine next 4 ingredients.
Add beet juice.
Cook until thickened.
Add oleo and horseradish and pour sauce over the beets.
Heat and serve.
Makes 4 servings.
