Eggplant, Squash Or Broccoli Casserole - cooking recipe

Ingredients
    1 pt. any vegetable
    1 medium onion, chopped
    1 can cream of mushroom soup
    4 oz. sour cream
    1 block oleo
    1 pkg. Pepperidge Farm stuffing (can use Ritz or saltines)
Preparation
    Stew vegetable with onion.
    Drain and add sour cream, soup and 1/2 cup stuffing.
    Melt oleo in baking dish and add remaining stuffing to line bottom of dish.
    Pour mix over this and bake about 30 minutes to 1 hour until done.
    Add crushed crackers on top and put back in oven to brown slightly.
