Corn Cakes - cooking recipe

Ingredients
    1 (16 oz.) can cream-style corn
    1/2 c. flour
    1/3 c. minced chives
    1 egg
    3 Tbsp. vegetable oil
Preparation
    In a medium bowl, combine the corn, flour, chives and egg. Beat until well-blended.
    Heat a large heavy frying pan, preferably cast iron, over medium-high heat.
    Add 2 tablespoons of the oil. When oil is hot, gently drop in the batter by heaping tablespoonfuls and cook cakes until the bottoms are golden brown, about 1 minute.
    Turn cakes over and brown other side.
    Repeat, using all batter and remaining oil if skillet becomes dry.
    Makes 4 servings.
