Mulligatawny Soup - cooking recipe

Ingredients
    1/2 c. onion, chopped
    1 carrot, diced
    1 1/2 Tbsp. flour
    2 stalks celery, chopped
    1/2 tsp. curry powder
    6 c. chicken broth
    1 tart apple, diced
    1/4 c. rice (uncooked)
    1 c. chicken, diced and cooked
    1/2 tsp. pepper
Preparation
    Saute the onion, carrot and celery lightly but not brown. Stir in the flour and curry powder.
    Stir and cook for 3 minutes. Add chicken broth and simmer 30 minutes.
    Add apple, rice, chicken and pepper.
    Simmer for another 15 minutes.
