Aunt Shirley'S Vegetable Soup - cooking recipe

Ingredients
    1 carrot, diced
    1 stalk celery, diced
    1 small onion, diced
    1/4 small head cabbage, finely chopped
    1 lb. stewing beef, cooked and chopped
    salt and pepper to taste
    1 can green beans, drained
    1 can peas, drained
    1 jar pimentos, drained
    1 can tomato juice
    4 potatoes, peeled and diced
    1 qt. beef broth
Preparation
    Combine all ingredients in a large soup kettle.
    Bring to a boil and then simmer for at least one hour or until all vegetables are tender.
    Serve hot with grilled cheese sandwiches for a warm winter lunch.
