Favorite Chicken Salad - cooking recipe
Ingredients

1 chicken (2 1/2 lb.), cut up
1/4 c. water chestnuts, sliced
1/2 c. chopped celery
3/4 c. mayonnaise
1 tsp. curry powder
2 tsp. soy sauce
2 tsp. lemon juice
8 oz. can pineapple chunks
1 tsp. salt
3 peppercorns
1 lettuce
Preparation

Put chicken in a saucepan with 3 cups of water, 1 teaspoon salt and 3 peppercorns.
Bring to a boil; lower heat, cover and simmer for 45 minutes or until tender.
Drain, bone and cut into bite size pieces.
Combine chicken, chestnuts, grapes and celery. Mix mayonnaise, curry powder, soy sauce and lemon juice.
Pour over chicken; toss lightly to mix.
Chill.
Spoon on lettuce and garnish with drained pineapple chunks.
