Crab Cakes - cooking recipe

Ingredients
    2 Tbsp. butter
    3 Tbsp. flour
    1 c. milk
    2 c. crab meat (6 1/2 oz. size)
    2 Tbsp. chopped parsley
    salad oil
    2 egg yolks, slightly beaten
    1/2 tsp. salt
    1/8 tsp. nutmeg
    dash of cayenne pepper
    1/2 c. soft bread crumbs
    3/4 c. dry bread crumbs
Preparation
    Melt butter in pan.
    Remove from heat.
    Stir in flour and make into a smooth paste.
    Gradually stir in milk.
    Bring to a boil. Reduce heat.
    Beat some of hot mixture into egg yolks.
    Return rest to saucepan, stirring until thickened.
    Remove from heat. Add crabmeat, parsley, salt, nutmeg, cayenne pepper, soft crumbs and 1/4 cup dry crumbs.
    Mix well.
    Cover and chill at least 30 minutes.
    Shape into cakes; dip into egg yolk mixture.
    Coat completely with remaining crumbs.
    Saute until brown.
    Makes 4 servings.
