Food Haven Gumbo - cooking recipe

Ingredients
    1 garlic pod (not clove)
    1 lb. okra, sliced
    1 red bell pepper, chopped
    1 lg. onion, chopped
    1 can diced or stewed tomatoes
    2 qt. water
    4 cans chicken broth
    5 lbs. seafood (3 lb. shrimp, 1 bay scallops, 1 other)
    Add some crab claws
    1/2 lb. spicy sausage
    juice from 1/2 lemon
    1 Tbsp. dried thyme
    2 bay leaves
    2 Tbsp. parsley
    1 tsp. black pepper
    1 tsp. cayenne pepper
    1/2 cup white wine
    tbsp. Old Bay Seasoning
    1 bunch green onions
Preparation
    Roux:
    Use 1 1/2 cups of all purpose flour and blend into 1 1/2 cups hot oil or pork renderings to make dark brown roux (almost burned).
    Stir all the time roux is cooking, about 30 minutes.
