Caribbean Pork 'N' Rice - cooking recipe
Ingredients

1 lb. pork tenderloin, sliced
1 onion, chopped
2 carrots, chopped
1 (14 oz.) can pineapple chunks
14 oz. water
2 Tbsp. barbecue sauce
1 tsp. ginger
1 pepper, chopped
2 c. cooked white rice
Preparation

Cook slice pork tenderloin in a little oil in a large skillet. Add onion and chopped carrot and cook until pork is no longer pink. Stir in pineapple chunks, water, barbecue sauce, ginger, green pepper and rice.
Bring to a boil.
Cover and let stand 5 minutes.
