No-Bake Cheese Cake - cooking recipe
Ingredients

2 envelopes Knox unflavored gelatine
1 c. sugar
1/4 tsp. salt
2 eggs
1 c. milk
1 Tbsp. lemon rind
3 c. cottage cheese (24 oz.), sieved
1 tsp. lemon juice
1 tsp. vanilla
2 tsp. butter
1/2 c. graham cracker crumbs
1/4 tsp. cinnamon
1/4 tsp. nutmeg
1 c. heavy cream
Preparation

Mix together gelatine, sugar and salt in a double boiler. Beat together egg yolks and milk.
Add to gelatine mixture.
Cook over boiling water, stirring constantly until gelatine is dissolved and mixture thickens, about 10 minutes.
Remove from heat.
Add grated lemon rind.
Cool.
Stir in cottage cheese, lemon juice and vanilla.
Chill, stirring occasionally until mixture mounds slightly when dropped from spoon.
