Butternut Squash Casserole - cooking recipe

2 c. cooked, mashed butternut squash
3 large eggs
3/4 c. sugar
1/3 c. butter or margarine, softened
1/3 c. milk
1 tsp. ground ginger
1/2 tsp. coconut flavoring
1 1/2 c. corn flake crumbs
3/4 c. firmly packed brown sugar
1/2 c. chopped pecans
1/4 c. butter or margarine, melted
Preparation

Combine squash, eggs, sugar, butter or margarine, milk, ginger and coconut flavoring, pour into a lightly greased 8 inch square baking dish.
Bake at 350 degrees for 35 minutes.
While baking, combine corn flake crumbs, brown sugar, pecans and margarine in a bowl.
Sprinkle casserole with crunchy cereal topping and bake 10 additional minutes. Makes 6 to 8 servings.
