Zucchini Casserole - cooking recipe
Ingredients

5 c. zucchini, cubed small
1 c. chopped onions
1 clove garlic, diced small
2 Tbsp. oil
2 to 3 tomatoes, chopped or cubed
1 1/2 c. cooked rice
1 c. shredded sharp cheese
1 1/2 tsp. garlic salt
1/2 tsp. basil
1/2 tsp. oregano and paprika
1 lb. hot or mild sausage
Preparation

Saute the first 4 ingredients in pan. In large bowl, combine tomatoes, rice, cheese and seasonings. Remove casing on sausage and break apart; cook down. Cool and add to vegetables. Put all into greased casserole. Spread 1 cup shredded cheese on top. Cover and bake at 350\u00b0 for 30 minutes. Remove cover and bake 5 minutes more.
Make a salad and enjoy!
