Chicken Enchilada - cooking recipe
Ingredients

3 to 4 chicken breasts, boiled and meat removed
1 can cream of chicken soup
1 can whole chili peppers, chopped
1 medium onion, chopped
Monterey Jack cheese, shredded
corn tortillas
enchilada sauce
Preparation

Reserve chicken broth.
Place in saucepan chopped chicken breasts, can of cream of chicken soup and chopped peppers.
Heat thoroughly.
Heat corn tortillas in chicken broth just until semi-soft.
Place spoonful of chicken mixture on corn tortilla, then top with onion and cheese.
Roll and place in casserole dish. Top with enchilada sauce and additional cheese.
Heat at 350\u00b0 until cheese has melted and enchiladas are hot and bubbly.
