Unfried Low-Fat Catfish(Servings: Four) - cooking recipe
Ingredients

4 (4 oz.) strips fresh catfish fillets
1 tsp. thyme (dried)
1 tsp. basil (dried)
1/2 tsp. garlic powder
light vegetable oil cooking spray (Pam)
1/4 c. yellow cornmeal
1/2 tsp. lemon pepper
4 tsp. blackening seasoning
1/2 tsp. paprika
Preparation

Preheat oven to 400\u00b0.
Spray the vegetable oil over baking sheet 3 times to coat.
Put the cornmeal, thyme and basil on a large plate and mix well.
Sprinkle just a pinch of garlic powder (1/8 teaspoon), 1/8 teaspoon of lemon pepper and 1 teaspoon of blackening seasoning on each catfish fillet.
Then coat the fillets with the cornmeal mixture of thyme and basil and transfer them to the prepared baking sheet.
Dust each fillet with 1/8 teaspoon of paprika and then cook each fillet lightly with cooking spray (Pam).
Bake for 20 minutes at 400\u00b0, then reduce heat to 350\u00b0 for 5 minutes, until fish is golden brown and flaky.
