Soft-Fried Pork - cooking recipe

Ingredients
    5 oz. lean pork
    2 1/2 c. peanut oil (consumption about 8%)
    1/2 tsp. salt
    1 Tbsp. cooking wine
    1/2 tsp. spiced salt (buy at Oriental grocery)
    1 egg
    3 Tbsp. wheat flour
Preparation
    Cut pork into diamonds of about 1/2 x 1/2 x 3/4-inch; mix with salt and cooking wine.
    Break and beat egg in a bowl.
    Add flour and stir the mixture into a smooth batter.
    Add a tablespoon of peanut oil and mix well.
    Put pork in.
    Mix and coat well with batter.
    Heat oil again and return pork to pan for another minute more of frying.
    Drain.
    Sprinkle on spiced salt before serving. Serves 2.
