Spanakopita (Spinach Pie)(Greek) - cooking recipe

Ingredients
    1 lb. fillo
    2 lb. spinach
    4 to 5 eggs
    1 lb. Feta cheese
    1/4 lb. butter (1 stick)
    1/2 c. chopped parsley
    1 bunch scallions and 1 whole onion
    1/4 c. chopped dill
    1/4 c. chopped mint
    dash of salt and pepper
Preparation
    Wash thoroughly and drain the spinach well.
    (May use food processor.)
    Sprinkle with salt.
    Squeeze spinach to drain all water.
    Saute onions, parsley, dill and fennel in a frying pan. Let cool.
    Beat the eggs.
    Cut the cheese, then mix all together with spinach.
    Brush each sheet of fillo with butter and place in pan 8 to 10 layers.
    Put your mixture in pan and add remaining 8 to 10 sheets of fillo on top.
    Brush each with butter as you go along. Fold edges under and bake at 350\u00b0 for 1 hour.
    Preparation time: 30 minutes.
