Wild Rice Salad - cooking recipe

Ingredients
    1 c. raw wild rice
    3 1/2 c. low salt chicken broth or water
    1 c. pecan pieces
    1 c. yellow raisins
    1/4 c. chopped fresh mint leaves
    4 green onions, sliced
    1 (11 oz.) can mandarin oranges, halved and drained
    grated rind of 1 orange
    1/3 c. orange juice
    1/4 c. oil
    1 1/2 tsp. salt
    pepper
Preparation
    Cook wild rice in broth or water until liquid is absorbed, about 1/2 to 2 hours.
    Cool; add pecans, raisins, mint, onions and orange sections.
    Set aside.
    Combine orange rind, orange juice, oil, salt and pepper and mix well.
    Pour over rice mix and toss. Let stand at room temperature 2 hours.
    Serve at room temperature or chilled.
