Ricotta Cheese - cooking recipe

Ingredients
    1 qt. fresh whole milk
    whey (leftover from 10 qt. milk)
    1/2 c. vinegar
Preparation
    Strain and cool the fresh goat milk to 50\u00b0 or less.
    Pour into clean glass canning jars up to within 1-inch of the tops.
    Put the lids and bands on and screw them down tightly.
    Place jars in a large kettle that is partly filled with water. Cover and bring the water to a boil.
    Let it boil for 1 hour, being careful that it doesn't boil down too far. Cool and store in a dark place.
