Skillet Squash Au Gratin - cooking recipe

Ingredients
    2 summer squash, sliced thin
    2 tomatoes, peeled and sliced
    1 small bell pepper, cut into 1/4-inch strips
    1 small onion, cut into strips
    2 Tbsp. margarine
    1/4 tsp. salt
    1/2 c. grated Cheddar cheese
Preparation
    Mix first four ingredients gently with salt.
    Heat the margarine in a large skillet until hot.
    Pour the vegetables into skillet.
    Cover tightly.
    Cook at medium heat for about 8 minutes, stirring gently twice.
    Sprinkle cheese on top of mixture.
    Cover and cook until cheese is melted.
